Banana and Corn Muffins
3 ripe bananas
1/2 cup sugar
2/3 cup melted butter
3/4 cup buttermilk
2 large eggs
2 cups flour
1/2 cup very finely ground cornmeal
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon mixed spice
1 teaspoon salt
Place the bananas and sugar in a blender and process until smooth.
Add the melted butter and process again then add the eggs and buttermilk
and blend once more. Sift the dry ingredients into a large bowl.
Make a well in the centre and quickly stir in the banana mixture.
Just stir long enough to combine - overmixing toughens the dough.
Place in deep greased muffin pans and bake in a preheated 180C
oven for 20-25 minutes. Makes around 16 large muffins.
