Bluff Oysters
When it comes to oysters, I like mine raw with
just a little seasoning to jazz things up. If I were going to serve
anything with them, I think my choice would be little triangular
cream cheese sandwiches. Simplicity itself to make – just mash
a little finely chopped fresh dill into some light cream cheese.
Spread this on thin fresh bread – white or wholemeal. Peel and
thinly slice some Lebanese cucumber. Make a sandwich using the
slices on the bread. Remove the crusts and cut into small triangles.
For the oysters, mix together two tablespoons
of lemon or lime juice, one small deseeded, finely chopped chilli,
one tablespoons tomato ketchup and a dash of Worcestershire sauce
and sprinkle over the raw oysters. Grind over some black pepper
and sprinkle with a little Maldon sea salt. Perfect.
