Not Fried Chicken

8-10 chicken drumsticks
1/2 cup flour
1/4 teaspoon cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon chicken stock powder
2 eggs
2 teaspoons German mustard
1 cup crushed cornflakes
1 teaspoon parmesan cheese

Mix together the flour, cumin, cayenne and chicken stock powder. Whisk together the eggs and mustard. Mix the cornflakes and parmesan. Skin the drumsticks and roll them in the flour. Shake off any excess then dip in the egg mixture and then roll them in the cornflakes. Place on a rack in an ovenproof dish and bake at 180C for around 35 minutes, turning once. Serve hot or cold. Tasty for a picnic or a carried lunch.
