Hoisin Pork

750g lean pork mince
1 large onion, finely chopped
1/2 cup chicken stock
2 tablespoons Hoisin sauce
1 green pepper, sliced
1 red pepper, sliced
2 sticks celery, chopped diagonally

Brown the pork mince in a large, non-stick frypan then add the onion and cook a further five minutes. Stir in the Hoisin sauce and chicken stock and simmer for 10 minutes then add remaining ingredients and simmer until the celery is just cooked through but retains some crunch. Adjust the seasoning, thicken the sauce with a little cornflour and water if desired, and serve immediately over boiled noodles. This dish can be accompanied with some stir-fried vegetables.
