Devilled Nuts
1kg skinned peanuts
1 tablespoon curry powder
1 tablespoon powdered cummin
1/2 teaspoon chili powder
2 teaspoons salt
Place the peanuts in a large roasting pan, mix through a tablespoon
of oil and bake in a hot oven, turning regularly, until roasted.
Watch carefully to ensure the peanuts don't burn. Alternatively,
place the peanuts in a large microwave suitable bowl, mix in a
tablespoon of oil, and cook on high for 8-10 minutes, stirring
well every couple of minutes. The peanuts will be sizzling and
starting to colour when ready. Mix together the remaining ingredients
and stir through the hot nuts. Allow to cool then bag or store
in airtight containers until required.
