Speedy Coconut Ice

500g icing sugar
100g butter
50ml milk
1 1/2 (one and one half) cups desiccated coconut
1 tsp vanilla essence
pink food colouring

Place the sifted icing sugar in a large microwave-suitable bowl. Add the butter, cut into chunks, and the milk. Microwave on high for 2 1/2 minutes. Add the vanilla essence, food colouring and a cup of coconut and mix well. If the mixture is a bit moist you can add some more coconut. Pour into a greased square cake tin and allow to set. Mark into squares before completely.
