Marmalade
6 grapefruit
2 lemons
3 litres water
2 kg sugar
Thinly slice the grapefruit and lemons, using a sharp
knife or the slicer on your food processor. Place in a large bowl and add
the water. Leave overnight. Next day bring to the boil and let boil for
30 minutes. Add the sugar. Bring back to the boil quickly and boil for
a further 30 minutes. Test. Bottle in clean hot jars and seal.
