Spiral Salad

2 cups pasta spirals
1 large carrot cut into matchsticks
1 green pepper, thinly sliced
2 spring onions
1/4 cup white vinegar
1/4 cup oil
1 tablespoons finely chopped fresh herbs - thyme and marjoram for preference
pinch salt
freshly ground pepper

Cook the pasta spirals in boiling salted water for six minutes, adding the carrot and green pepper during the last two minutes. Drain and refresh immediately with cold water and place in a salad bowl. Add the chopped spring onions. Whisk together the oil, vinegar, herbs and seasonings and pour over the pasta. Serve lightly chilled or at room temperature.
