Tomato, Cucumber and Tamarind Salad
1 cup sliced cucumber
1 red onion, finely sliced
3 medium tomatoes, sliced
2 tablespoons tamarind pulp
200ml boiling water
Place the tamarind pulp (available in blocks from Asian speciality
stores) in a jug and pour over the boiling water. Allow to stand
for 10 minutes, stirring once or twice. Strain through a sieve
to remove the hard pieces. Put the sliced cucumber, tomato and
onion in a shallow dish and pour over the tamarind liquid.
