Artichoke Salad
several Jerusalem artichokes
4 radishes
1 orange
Peel and thinly slice the artichokes. Wash and slice the radishes
and peel and chop the orange. Place all ingredients together in
a bowl.
Whisk together:
juice 1 lemon
1 tablespoon
olive oil
pinch salt
a little freshly ground pepper
Pour over
the salad ingredients, turn to cover, sprinkle with finely
chopped chives and chill.
