Sesame Spirals

1/2 packet pasta spirals
1/4 cup light soy sauce
2 tablespoons rice wine vinegar
2 tablespoons vegetable oil
1 teaspoon sesame oil
2 cloves garlic, crushed
1 teaspoon fresh ginger juice
2 tablespoons toasted sesame seeds
3 spring onions, chopped

For the ginger juice, press one or two chunks of fresh ginger in a garlic press and collect the liquid. Combine the soy sauce, vinegar, oil, garlic and ginger. Cook the pasta spirals, according to instructions. When cooked, add 1 cup cold water then drain. Stir through the dressing. Just before serving sprinkle over the sesame seeds and spring onions. This dish is best served at room temperature.
