Okra and Tomatoes
1 tablespoon olive oil
1 medium onion finely chopped
1 clove garlic, crushed
1/2 teaspoon coriander seeds, crushed
8-12 okra pods
1 green pepper, diced
1 can tomatoes
2 tablespoons tomato paste
Heat the oil and saute the onions, garlic
and coriander seeds for three minutes then add the okra and green
pepper and saute a further five minutes. Mash the canned tomatoes
and tomato paste and add to the pan. Cover and simmer for 12 minutes.
Serve as a side dish with grilled steak or chops, serve hot over
rice, or cold as a salad.
