Smoked Chicken Salad
For a more substantial meal you can add some sliced
hard-boiled eggs.
A
whole smoked chicken or two smoked chicken breasts
150 snowpeas, blanched for a minute in boiling water, then plunged into iced
water to cool
lettuce
1 red onion, finely sliced into rings
1/2 red pepper, diced
2 tomatoes, halved and sliced
3 tablespoons finely chopped chives
1/2 cup toasted hazelnutspesto dressing
Dice the chicken meat. Place the salad ingredients
in a bowl, add the diced chicken and toss. Just before serving,
add the pesto dressing.
Pesto Dressing
1/4 cup virgin olive oil
2 tablespoons lemon juice
2 tablespoons wine vinegar
2 tablespoons pesto
1/2 teaspoon freshly ground pepper
Whisk all the ingredients together. Pour over
the salad and toss.
