Buttermilk dressing

1 egg
1 clove garlic, crushed
1/4 teaspoon salt
1/4 cup white vinegar
1 cup salad oil
1/2 cup buttermilk
1/4 cup chopped fresh herbs
freshly ground pepper

Place the egg in a blender and process with a tablespoons of vinegar, the garlic and the salt until well mixed. Gradually add the oil, a little at a time until a thick emulsion is formed. Add the remaining vinegar and process again then, with the motor still running, gradually add the buttermilk. Tip in the herbs and pepper, process again, adjusting the seasoning as required. Chill.
