Savoury Bread
1 french bread stick
olive oil
2 cloves garlic, crushed
Tomato paste
dried basil
mozzarella cheese
Slice the bread diagonally into 1cm slices. Crush the garlic and
mix it with about quarter of a cup of olive oil. Brush both sides
of the bread with this oil and place on an oven tray. Spread each
slice with a thin layer of tomato paste and sprinkle on a little
dried basil and grind over some pepper. Top with thin slices of
mozzarella cheese. Place in a hot oven and bake for about eight
minutes. This well flavoured bread makes a good snack lunch. It
goes well with soup or salad. It also makes a tasty cocktail nibble
when cut into smaller pieces. Or it can make a pleasant change
from garlic bread on a buffet or with a barbecue.
