Potato Pancakes
2 eggs
3 cups grated potatoes
1 medium onion, finely chopped
1 teaspoon salt
freshly ground pepper
2 tablespoons crushed cracker crumbs
Beat the eggs and add the remaining
ingredients. Drop by the large spoonful onto a hot greased
pan and brown well on each side. Keep warm until required. Serve
with apple sauce and bacon rashers.
