Potato Pie2 sheets pre-rolled puff pastry Place one sheet of pastry in a pie dish and trim. Cover the base with the finely chopped onion, the bacon and the sliced potatoes. Top with the peppers and tomato slices then sprinkle with the grated cheese. Whisk together the eggs and the fromage frais or sour cream, seasoning as required. Pour over the other ingredients, top with the remaining sheet of pastry. Trim and decorate, cutting a few vents in the top. Brush with a little egg - the scrapings from the egg/cheese mix will do - and bake in a pre-heated 220C oven for 35 minutes. Allow to stand for 10 minutes. Serve with a salad.
