Savoury Muffins

2 cups self rising flour
1 1/2 cups grated tasty cheese
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon cayenne powder
1/2 teaspoon ground cardamom
1/2 cup chopped fresh basil
3 tablespoons finely chopped salami
3 soft sundried tomatoes, finely chopped
2 eggs
200ml milk
3 tablespoons oil

Place the dry ingredients in a large bowl and stir in the cheese, basil, salami and sundried tomatoes. Whisk together the milk, eggs and flour.

Make a well in the centre of the ingredients in the bowl and add the liquid. Stir quickly to mix, but do not over-mix or the resulting muffins will be tough. It doesn't matter if the mix looks a little lumpy.

Grease a 12-pan muffin tray and spoon in the mix. Bake at 200C for 20 minutes.
