Smoked Oyster Savouries
12 slices sandwich-sliced
bread
oil spray
1 can smoked oysters
2 tablespoons butter
3 tablespoons flour
200ml milk
1 tablespoon chopped parsley
With a large cookie
cutter, cut the bread into rounds that will fit in patty pans.
Spray with oil and press, oil side down, into the patty pans.
Bake at 200C for 8-10 minutes until golden and crisp.
Meanwhile melt the
butter and stir in the flour. Cook a further minute then whisk
in the milk and parsley and cook, stirring constantly, until
the mixture thickens. Drain and chop the smoked oysters and
add to the white sauce. Reheat and spoon into the hot bread
cases and serve.
