Gazpacho
1 can tomato juice
1 can tomatoes in tomato juice
1 small to medium cucumber
1 cloves garlic
2 green peppers
2 spring onions
1/4 cup olive oil
2 tablespoons lemon juice
seasoning
chopped fresh basil and marjoram
dash Tabasco sauce
Peel the cucumber and remove the seeds. Finely
chop one third of the cucumber and set aside. Place the tomatoes
and juice, cucumber, garlic, one and a half green peppers, lemon
juice, seasoning, oil and herbs in a blender and process until
smooth. Pour into a large soup tureen, garnish with the finely
chopped spring onion, remaining half capsicum and finely chopped
cucumber and chill until required. This is a good starter for
a summer meal. You may like to sharpen the flavour with a little
more lemon juice - or lime juice.
