Gazpacho1 can tomato juice Peel the cucumber and remove the seeds. Finely chop one third of the cucumber and set aside. Place the tomatoes and juice, cucumber, garlic, one and a half green peppers, lemon juice, seasoning, oil and herbs in a blender and process until smooth. Pour into a large soup tureen, garnish with the finely chopped spring onion, remaining half capsicum and finely chopped cucumber and chill until required. This is a good starter for a summer meal. You may like to sharpen the flavour with a little more lemon juice - or lime juice.
