Gala Dinner

It was India comes to Australia when the Organising Committee for the Commonwealth Games 2010 in Delhi hosted a gala dinner in Melbourne's Town Hall.

Guests were treated to a sparkling spectacle of Indian culture ranging from frenetic percussion to gentle dancing, Bollywood to high fashion from designer Ritu Beri.

Prince Edward was among those presented with a fusion menu. Vegetarians struck it lucky with options acknowledging the dietary observances of many present.

Menu

Entree 1

Hot-smoked salmon on a lemon-scented kipfler potato
and avocado saad with crisp capers and salmon roe

Vegetarian: Baked and marinated ricotta served
on a bed of eggplant, spinach and kasoundi relish

Entree 2

Roasted fillet of kangaroo rolled in native pepper
tapenade with remoulade, herb oil and saffron mayonnaise

alternating with

Chicken parfait and sumac lavosh served
with snowpea, mango and fennel salad

Vegetarian: Bhindi masala with cabbage raita and green avakai

Main Course

Garam masala-rubbed lamb rump resting on eggplant
spinach and kasoundi relish and coconut sambal

Vegetarian: Potato, coriander, ricotta
cheese and pea curry with saffron basmati

Dessert

Navel orange, cardamom and ginger pudding dollop
with roasted walnut mascarpone and drizzled with wildflower honey
